This is a really great dessert for the Tropics because it is cooling and light. In Belize, I purchase Agar from the Taiwanese store in Belize City; it is a quite a specialty product here so you will have to make a determined effort to find it.
It’s definitely worth it because it sets quicker than jelly and can set at room temperature…even in the Tropics at 40C (104F).
This is what you do; combine in a pot:
10g (1/3oz) agar
1/4 cup sugar
1 tsp vanilla essence
1 quart) of water
and boil on stove until all the agar dissolves. This takes about 10 minutes.
Pour into ice cube trays:
Allow the agar to set at room temperature; about 45 minutes. Then place in the fridge or freezer to cool. I put mine in the freezer and it takes about 1.5 to 3 hours to cool.
Serve in a tall glass and enjoy…
