Spicy Ginger Pork Cakes with Paddy Straw Mushrooms.

Take:

200g of Lean Minced Pork

and marinate for one hour with the following:

1 tbsp finely grated ginger

1/2 small onion finely chopped

8-14 sliced bird chilli peppers (optional)

salt to taste

Heat up a cast iron skillet with:

1 tbsp vegetable oil

and shape the marinated meat into small, slightly flattened cakes about 5cm in diameter.  Brown cakes on skillet , cook without cover on medium heat for 10 minutes.  Next add:

paddy straw mushrooms, sliced

and stir-fry for 1 minute.  Then add:

handful of chopped greens

and stir-fry for 1 more minute.

Serve with Chaya Fritters and side of Grapefruit.

Serves 2.
