Purslane Chicken Chow Mein

Take:

200g of Chow Mein noodles

and boil for 4 to 5 minutes until soft.  Put cooked noodles in a colander and wash with cold water.  Leave to drain.

Next, take:

1 chicken breast, sliced 1cm thick

and marinate chicken for one hour in the following:

2 tbsp soya sauce

2 tbsp coconut oil

In a wok or skillet, heat up 2 tbsp of coconut oil to high temperature.  Take:

1 onion, finely sliced

and fry this in the oil.  Next, add the chicken and fry unil well-done (about 5 minutes).  Then add:

handful of wild purslane

and stir fry for 30 seconds.  Then add chow mein and lower heat to low.  Stir noodles well to stop it from sticking (about 5 minutes).  Add:

salt, soya sauce and black pepper to taste

Serve hot and sprinkle with:

salad onions, finely chopped

Serves 2.
