Green bananas make a really hearty carbohydrate.  This recipe can be eaten as a snack or used as a carbohydrate accompaniment to a meal.  It’s really simple way to cook bananas in a tasty way.

Great with Meals:

Allow for 2 Bananas per person.

Tips: Wear disposable gloves whilst preparing green bananas because they have sticky sap.  If you are not going to slice and cook the bananas immediately, the peeled fruit will turn brown when in exposed to air.  To prevent the discolouration, you can place the peeled bananas in a bowl of water.

Take:

unripe, green bananas, peel and slice thinly

Take a skillet and place on high heat, add:

coconut oil, 2 to 3 tbsp (per 4 to 6 bananas)

Once the oil is hot, add the sliced bananas.  Stir every 2-3 minutes so that the individual slices are cooked uniformly (otherwise, they stick to each other in stacks).  After 10 minutes on high heat with the frequent stirring, lower to low-medium heat.

Add:

salt to taste

1/4 tsp tumeric (yellow ginger) powder

1/4 tsp chilli powder

The tumeric and chilli powder are local spices found in Punta Gorda Market, Belize.

Cook on low heat for a further 10 to 15 minutes until the bananas are tender.
