Fried Chicken in a Bed of Greens.

Take:

2 x boneless chicken breast

and marinate them for 2-3 hours in:

1 tbsp soya sauce, 1/2 tsp turmeric (yellow ginger), 1/4 tsp cumin powder and a pinch of salt

Heat vegetable oil (fill to depth of 3mm) in a cast iron skillet set on a medium-high flame.  Dust Chicken with flour and brown both sides on skillet.  Turn flame to lowest setting, place cover on skillet and cook for 10 minutes.  2 minutes prior to the end of cooking, flip the chicken over to get even browning.

Take:

400g of vegetable leafy greens (Avuvo/Calaloo/Kale/Bok Choi/Spinach/Any Edible Green Leaf)

and steam for 1-2 minutes.

Serve Fried Chicken with Greens.  Serves 2.
