Coconut Purslane Salad

Wild Purslane of Belize.
Wild Purslane of Belize.

Take:

1 small onion, finely chopped

100g of fresh coconut, shredded

1 jalopeno pepper, finely chopped

1 tbsp coconut oil

2 tbsp lime juice

salt and pepper to taste

Combine all ingredients in salad bowl.

Can be enjoyed with nachos or corn tortillas.
