These are absolutely delightful cookies made from cacao butter:
Topped with Balam (Mayan White Cacao) whole roasted beans; the pale ones are lightly roasted and the dark ones are medium roasted. This can be substituted with cacao nibs instead.
Balam:
Put in a large bowl and mix thoroughly:
1/2 cup of cacao butter, softened
1/3 cup powdered sugar
1/2 tsp of salt
Next add:
one egg
1 tbsp vanilla essence
1 cup cake flour (sifted)
1/4 tsp baking soda
Mix and roll into dough. Wrap in cling-film and refrigerate for 30 minutes.
Next divide dough into 16 equal pieces and roll into round cookie shape about 1 inch (2.5cm) in diameter and decorate with a whole roasted cacao bean. Alternatively, you can place cacao nibs on top.
Place on cookie sheet and bake for 15 minutes at 165 C (325F).
