This meal is made of our own green bananas and fresh coconut cream from the farm.
Heat 1 tbsp of vegetable oil in a medium saucepan and add:
1 small onion, finely chopped
1 clove garlic, minced
Once the onion is browned, add:
200g of dry lentils (soaked in water for 3 hours and drained)
1 cup of chopped tomatoes (fresh or canned)
300mls of water
bay leaves 2-3
salt and pepper to taste
Bring to boil and simmer until lentils are tender (about 10 minutes if the lentils are pre-soaked).
Once the lentils are tender, add:
2 green bananas, cut length-wise into 4 pieces each
1 cup of coconut cream (fresh or canned)
Place a tight fitting lid on the saucepan and simmer on lowest heat for about 30 minutes until the bananas are tender.
Serves 2.
