This recipe incorporates pork sausage, fresh pineapple, ripe jackfruit and fresh bamboo shoots.

Heat a skillet on high heat and add:
2 tbsp coconut oil
When the oil is hot add the following:
1lb (450g) pork sausage, chopped into 1 inch chunks
1 medium onion, finely chopped
1 tbsp fresh ginger, finely chopped
10 to 14 bird pepper chillies, finely chopped (optional)
Fry the above for 2 to 3 minutes until the onions and sausage are browned.
Next add:
2 cups of pineapple, chopped
1 cup of ripe jackfruit, finely chopped
1 cup of fresh bamboo shoots, sliced
salt and pepper to taste
Place a lid over the skillet and turn the heat to low. Cook for 8 to 10 minutes until the sausage is done.
Serves 2. Serve with rice and a side of vegetables.
