This is a really easy recipe and it is absolutely delicious. The cassava cake is shop-bought and used in this savoury dish; its smooth texture and sweetness contrasts well with the spicy sausage and compliments the pineapple. If you can’t find cassava cake in the shops, you can always find a recipe from the Internet and start from scratch. It is definitely worth it!
Take:
cassava cake, 200g (1/2 lb) and cut into 2cm (1 inch) blocks
and cook on a medium heat on a skillet with a dash of coconut oil. Brown all sides of the cassava cake bits. Set aside.
Next take:
spicy sausage, cut into 2cm (1 inch) lengths
and cook in a skillet on medium heat until done.
Now make kebabs by placing the following in a bamboo skewer:
cassava cake piece, piece of sausage and pineapple
keep on building these units until you fill the entire length of the skewer.
Makes 8 kebabs. Serve as a starter or as an accompaniment to a main meal.
