This recipe was created as a result of Gnome over-cooking a ton of black beans (40 cups to be exact). This is a bean burger made with home-made coconut flour (you can buy this a health food store) which helps to bind it into a patty shape. Chilli peppers and whole black peppers give it a spicy kick. I used coarsely ground rice flour, which has a similar consistency to semolina, to add a crunchy outer texture.
Take:
2 cups (400g) of cooked black beans
mash up partially and add the following (and mix well):
2 tbsp soya sauce
1 tbsp coconut oil
1/2 cup coconut flour
1 egg
1/2 small onion finely chopped
1tbsp dried orang peel, coarsely ground in blender
8-14 sliced bird chilli peppers (optional)
1 tbsp whole black peppers (optional)
salt to taste
Heat up a cast iron skillet with: Put in a deep pan:
2 tbsp coconut oil
and shape into burger patties. Dust with rice flour on both sides. Brown burgers on skillet , cover and cook on low-medium heat for 10 minutes.
Makes 4 bean burgers (serves 2). Serve with bread and a side salad.
