Shell:
Fresh Pigeon Pea Green Pods to get 1 cup of peas
Next, take a cast iron skillet and add:
1 tbsp olive oil
heat up oil on a low flame and add:
1 onion, finely chopped
saute onion slowly until delicately brown.
Next add:
1 cup of green pigeon peas
and mix well into the cooked onion.
Cook for 3-4 minutes and then add:
2 cups of green papaya, finely sliced
2 cups of chaya or green leafy vegetable (eg. spinach or kale)
salt and pepper to taste
cover and simmer for 5-7 minutes until papaya is tender
Serves 2. Â Serve with crusty bread or rice (a nice one like Jasmine or Basmati).
