Take:
12 to 16 dried shiitake mushrooms
and soak in warm water for 2 to 3 hours. Next take:
100g of Lean Minced Beef
and marinate for at least one hour with the following:
2 tbsp soya sauce
1 tbsp sesame oil
1 to 2 cloves of garlic, finely chopped
salt to taste
Next, take the hydrated shiitake mushrooms and squeeze them dry with your hands. Cut off the mushroom stems, chop them finely, and add to the marinated minced beef. Now, stuff each mushroom with about a teaspoon of the meat.
Heat up a cast iron skillet with:
1 tbsp vegetable oil
Brown stuffed mushroom (meat underside) on skillet and then turn over. Add:
200mls of white wine (I use home-made mead)
and cook with cover on low heat for 20 minutes.
Serve with Lentils.
