
Take:
1/2lb (200g) of minced (ground) beef
and marinate for one hour with the following:
2 tbsp soya sauce
1 tbsp coconut oil
1 tbsp cornflour
8-14 sliced bird chilli peppers (optional)
Take 16 medium sized wax apples and cut a wedge out of the bottom part:

Next, stuff the wax apple with the marinated meat:

Heat up a cast iron skillet with:
1 tbsp coconut oil
and sear the stuffed apples, particularly the bottom part with the meat:

Transfer the seared stuffed apples to an oven-proof dish.
Next, saute in vegetable oil:
3 medium onions, finely sliced
1 cup of chopped greens (spinach/ callaloo or equivalent)
Once cooked, place on top of stuffed apples in the oven-proof dish.

Cover and bake for 1 hour and 30 minutes at 350F (165C). Once cooked, the onions will have caramelised nicely to provide a gravy.
Serves 2 to 4. Serve with a side salad or fresh green vegetables. If you would like it with carbohydrate, it would go nicely with some rice.
