
Take:
5 cashew fruit
and skin them with a sharp knife; they peel quite easily. Chop the fruit into 1cm cubes (1/2inch).


Take:
1 lb(454g) of pork sausages, sliced 2.5cm (1 inch) thick
Heat up a cast iron skillet with:
1 tbsp coconut oil
and sear the sausage pieces for 2 to 3 minutes.
Transfer the seared sausage to an oven-proof dish.
Next, saute in vegetable oil for 1 to 2 minutes:
1 tsp of mustard seeds
1 tbsp brown sugar
Next, add:
1 medium onions, finely sliced
cashew fruit, cubed (above)
curry leaf, leaves of two sprigs
salt and white pepper to taste
Once cooked, mix into the sausages in the oven-proof dish.
Cover and bake for 60 minutes at 350F (165C). Once cooked, the onions will have caramelised nicely to provide a gravy.

Top with a sprinkle of fresh curry leaves.
Serves 2 to 4. Serve with a side salad or fresh green vegetables.
If you would like it with carbohydrate, it would go nicely with some rice.
