Take:

200g of Lean Minced Beef

and marinate for one hour with the following:

1 bar of peanut brittle, chopped up

2 tbsp soya sauce

1 tbsp coconut oil

1 tbsp cornflour

1 tbsp finely chopped ginger

1/2 small onion finely chopped

8-14 sliced bird chilli peppers (optional)

Heat up a cast iron skillet with:

1 tbsp coconut oil

and shape the marinated meat into small, slightly flattened cakes about 5cm in diameter.  Dust with flour on both sides.  Brown cakes on skillet , cover and cook on low-medium heat for 10 minutes.

While meat is cooking, heat oil in a medium saucepan and add:

1 small onion, finely chopped

1 clove garlic, minced

Once the onion is browned, add:

200g of dry lentils

800mls of water

bay leaves 2-3

salt and pepper to taste

Bring to boil and simmer until lentils are tender.

Serve Peanut Brittle Beef Cakes with Lentils.
