This is a great way of using up left over rice. It is sort of like a pizza made out of cooked rice and flour so you can vary the toppings as you wish. Just use your imagination and creativity.
Grease a pan 9 inches (22.5cm) square and set the oven at 350F (180C).
Beat:
2 eggs
and then add in the following:
1/2 tsp salt
1/2 tsp dried Italian herbs
2 tbsp coconut oil
1 cup of cooked ham or bacon, cut into pieces
Then stir in:
2 cups cooked rice
Sift over the batter:
6 to 8 tablespoons flour
Stir lightly and spoon into the pan. Next sprinkle with:
capers
1 cup mozzarella cheese, grated
Bake for 30 minutes. Cut into squares whilst warm. Once cool, remove from pan. Makes 16 pieces.
Serve as a snack or as a carbohydrate accompaniment to a meal.
