This recipe offers a tropical alternative to the much-loved Apple Pie. Jujube have a similar crunch and taste to an apple. More-over the wild jujube fruits that we used have a tart flavour which is similar to crab apples.

Prepare yeasted “bread” pastry:
Sift in a bowl:
2 cups flour
1tsp salt
1 tbsp sugar
1 pkt of yeast
Put in:
1/2 cup of water
1/4 cup milk
Make into dough. We used a pasta maker to knead the dough.

To make filling.
Take:
5 cups chopped jujube fruit

1 tbsp lemon or lime juice
1 cup brown sugar
1/4 cup cornstarch
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
About 1 cup water
Combine ingredients and place in a saucepan. Heat up mixture until it boils and then simmer at low heat for 10 minutes until fruit are tender.

Roll out dough into a 9inch pie tin. Bake at 180C for 45 minutes.

Best served hot with a dollop of vanilla ice-cream. Enjoy!!
