This is a really easy dessert which we make from our fresh coconut milk from the farm.
The dessert has a milky texture with a soft bite. It is a light dessert for the Tropics.
Combine the following ingredients:
1 + 1/2 cups coconut milk
1 + 1/2 cups water
1/2 cup + 2 tbsp white sugar
1/2 cup + 2 tbsp cornstarch
and stir until the mixture is smooth. Place in a saucepan and stir under medium heat until it thickens. Then lower heat and continue cooking for another 10 minutes, stirring constantly.
Pour into a 5 inch by 9 inch (12.5cm by 22.5cm) pan and refrigerate until firm. Usually takes about 30 to 60 minutes.
Cut into small squares and enjoy!
