Ginger Ale Chicken.

Ginger Ale Chicken with Rice and Greens.

Take:

4 pieces of chicken (breast/leg)

and marinate for one hour with the following:

2 tbsp soya sauce

juice of 1 lemon

1 tbsp cornflour

2 tbsp finely chopped ginger

3 tbsp lemon zest, finely chopped

salt to taste

Heat up a cast iron skillet with:

1 tbsp vegetable oil

Brown both sides of chicken on skillet.  Next add:

200mls of ginger ale

and cover and simmer under low heat for 25-30 minutes.

Chicken will gently caramelise in the ginger ale producing a sweet, thick sauce.

Serve with Rice and a side of Greens.

Serves 2.
