This is a yeasted Christmas Cake so-called because it is allowed to grow into a monster cake. The dough is so rich and sticky that can only be manipulated with a wooden spoon…but don’t worry about that…it is so easy to make. Especially good for unskilled bakers in the kitchen (like me).
Put in a large mixing bowl:
2 cups milk
1 package of yeast
let stand 5 minutes and then stir
Next add:
2 cup brown sugar
1 tsp salt
1 /2 cup of soft cacao butter (or butter)
4 eggs
and beat thoroughly. Next, beat in:
3 cups all purpose flour
Remove the beater and let the dough rise for about 40 minutes.
Mix in:
2 cups of flour
Let rise until double in bulk. Punch dough back down and mix and knead thoroughly into dough (use wooden spoon if too sticky to manipulate with hands):
2 cup slithered almonds
1 cup chopped candied fruit
2 tbsp chopped lemon rind
Let rise again until doubled in bulk. Punch dough back down and place in large baking tin (about 9inches by 15 inches) and decorate top with:
dried fruits, glacier cherries and almonds
Let rise again until doubled in bulk and bake for 50 minutes at 180C (350F).
Serving Suggestion: drizzle vanilla glaze just before serving.
Vanilla Glaze For Two Servings.
Take:
1/2 cup of icing sugar
1/4 tsp vanilla essence
1tbsp water
and mix thoroughly. Drizzle over Christmas Chaos Cake and serve immediately.
