Take:

400g of cassava, grated

and wash in a large bowl of water.  Then remove cassava and squeeze all water from it with your hands.

To the cassava add:

1 small onion finely chopped

salt to taste

pinch of ground white pepper

Heat up on medium to high flame in a skillet:

vegetable oil, 1cm in depth

and shape seasoned cassava into 10cm round patties.  Place the patties in the skillet when the oil is hot.  Wait 2 minutes and then flip the patties over.  Cook partially covered on low heat for 20 minutes.  Next top each cassava hash brown with:

mozzarella cheese, grated

and place skillet under the grill (broiler) for 3-4 minutes until cheese has melted and slightly browned.

Drain on paper towels.

Can be eaten as a snack or serve with a full breakfast

Serves 2.
